Shellfish is placed in custom built salt water tank system.
The salt water is constantly circulating in an aerated tank.
Salt water temperature in our Wet Storage is controlled and sterilized and tested for bacteria to meet FDA and State Health Dept regulations.
Shellfish is placed in our Wet Storage for approximately 24 hours.
The result of this is a sand free product with an extended shelf life.
All our product comes from certified waters.
